Abstract


Throughout various studies, traditional food has a significant role in a certain geographical area in the social and cultural fabric of communities. The present study aims to investigate the longstanding heritage of Sasak's traditional cuisine, with a specific emphasis on the highly regarded dish known as Sate Tanjung. This study aims to explore the various elements that contribute to the sustainability of this culinary tradition. This study will utilize a qualitative methodology based on ethnographic principles, focusing on those who are actively involved in the process of preparing, making, and consuming Sate Tanjung nowadays times. By conducting extensive field observations and employing the documentation of culinary procedures through the use of photography, with spontaneous interviews, this research endeavor seeks to comprehensively portray the complexities and customary practices that characterize this esteemed gastronomic dish in the family and business setting. The study is centered around a narrative analysis, which enables a thorough comprehension of the various complex aspects related to the practice of Sate Tanjung. Through the observation of everyday practice, cultural legacy, and skills that are handed down through the generations, this methodology enables a comprehensive investigation into culinary heritage exploration. Moreover, this study aims to provide insight into the tradition, and adaptability of traditional food in recent days, specifically examining the elements that contribute to the sustainability of Sate Tanjung in the face of changing culinary trends and global influences. Through this endeavor, our objective is not alone to improve our understanding of Sate Tanjung as a customary culinary creation, but also to make a valuable contribution to wider dialogues concerning the conservation and progression of traditional gastronomy among the challenges posed by contemporary society. This study has the potential to provide valuable insights for cultural preservation initiatives and enhance the understanding of the significant role of cuisine in preserving the identity of the Sasak community. In this investigation, our aim is to honor and protect the diverse range of culinary traditions in Sasak, specifically focusing on the sustainability practice of Sate Tanjung.
