Abstract


Free radicals are molecules that have one or more electrons in their outer orbit so they are unstable. Free radicals have various negative effects on body health including cancer, diabetes, cataract and premature aging. Thus, the human body needs antioxidants. Antioxidants can be obtained from plant parts, fruits, and vegetables. Gambier leaves contain catechins which are flavonoid compounds that can be useful as antioxidants. Ginger as an addition contains Vitamin A, B6, C, and so on which can also be useful as antioxidants. The method in this research is an experiment with quantitative analysis. The purpose of this study was to determine the feasibility of gambier leaf tea with the addition of red ginger as an anti-aging treatment in terms of antioxidant activity (laboratory test), aroma, color, and taste (organoleptic test), and panelist preference level test (hedonic test). The feasibility of gambier extract with the addition of red ginger in terms of the results of laboratory tests showed that the antioxidant activity with an IC50 value of 2354.8155 ppm was a good antioxidant. To get maximum anti-aging results, it is important to consume this functional drink routinely and regularly.
