Abstract


Stunting is a nutritional problem that has not been resolved until now. The national stunting prevalence rate in 2021 will reach 24.4%. One of the provinces with a high prevalence of stunting under five is West Sumatra with a prevalence of 23.3%. West Sumatra Province consists of 19 regencies/cities, and 2 areas with the highest prevalence of stunting, namely Kab. Solok with 40.1% and Kab. Pasaman 30.2%. One of the districts in Kab. Solok, namely Kec. Kubung This study aims to identify and explore the potential of traditional food in Kubung District which includes: (a) Types of traditional food, (b) main ingredients of traditional food, (c) Traditional food processing methods, and (d) potential of traditional food in Kubung District. for stunting prevention. This type of research is survey research with a descriptive method. This research was conducted in the Kubung subdistrict. The data in this study were obtained by literature study, Focus Group Discussion (FGD), and equipped with documentation. The data obtained from this approach is processed through three stages, namely: data reduction, data presentation, and concluding. The validity test was carried out by content validity and construct validity. Key traditional food. Kubung varies greatly, both in terms of type, main ingredients, and processing techniques. so that it has a high potential for stunting prevention, both for children, adolescents, adults, and others. The way to see the potential of these traditional foods is standardized in several stages, namely (a) making an inventory of the types of traditional foods, (b) classifying the nutritional value of traditional foods in the district. Kubung, (c) increasing the nutritional potential of traditional food in the district. Kubung is capable of preventing stunting.
